A simple, but healthy salad featuring quinoa. Truth be told, I go blank when I am in charge of making salads for any potluck. I will gladly swap for making bread instead . But, I do try to include salads in our meals off and on. Roasted bell pepper adds a ton of flavor and all the ingredients blend well together in this salad. Quinoa is loaded with protein and makes the salad very filling. Overall a keeper recipe for us. Off to the recipe.
Salad with quinoa and roasted red bell peppers.
- quinoa - 1/2 cup
- red bell pepper - 1 big or 2 small
- cucumber - 1/4 cup - diced
- cilantro - handful
- salt - to taste
- pepper powder - to taste
- lemon juice - 2 tsp (adjust to taste)
- olive oil - 1 tsp

1. Cook quinoa and keep aside.2. Roast bell pepper as shown here. Peel skin and chop into bite size pieces.3. Add the rest of the ingredients.4. Toss and serve.
