This is an easy peasy one pot dish perfect for weeknight dinners. I recently bought an electric pressure cooker in spite of owning 4 different stove stop pressure cookers. It certainly has made some aspects of my cooking simpler and this dish was also an experiment in the same. You can just use any pot and throw in all the ingredients. In a few minutes the delicious curry is ready. You can serve this with rice or roti. Off to the recipe.
Tofu Bell Pepper Curry
Healthy curry with tofu and vegetables.
Ingredients:
- olive oil - 1 tbsp
- onion - 1/2 cup - chopped
- garlic - 5 cloves - minced
- bell pepper - 3 cups - sliced into strips (I used 3 different colors)
- babycorn - 2 cups - sliced into 1 inch pieces
- tofu - 1 box - pressed and cubed
- tomatoes - 1 - small
- hot and sour sauce - 3 tbsp
- chilly powder - a pinch
- coriander powder - 1 tsp
- turmeric - a pinch
- salt - to taste
- cilantro - to garnish
Instructions:
Press tofu and cube.
Heat oil and saute onion and garlic. Add the rest of the ingredients except cilantro. Cook until the vegetables are done and garnish with cilantro. Serve with rice or roti.
