Easy banana bread.
- banana - 1 1/2 cups (about 2 - 3 ripe ones)
- butter - 1/3 cup
- baking soda - 1 tsp
- salt - a pinch
- sugar - 1/2 cup (can increase for a sweeter version)
- egg - 1
- vanilla extract - 1 tsp
- white whole wheat pastry flour - 1 1/4 cups (substitute all purpose flour - 1 1/2 cups)
- chocolate chips - 1/2 cup (optional)
Preheat oven to 350F and grease a 4 x 8 pan.
In a mixing bowl mash the bananas. Add the melted butter and mix.
Add the baking soda and salt. Mix.
Add sugar, beaten egg, vanilla extract. Mix. Add flour and mix. Fold in chocolate chips if using.
Pour into the greased loaf pan and bake for 50min to an hour until a tooth pick inserted in the center comes out clean.
Remove from oven. Allow to cool and then slice.
I used 3 mini loaf pans in a toaster oven. I baked at 250F for 40 min.
