I have posted a ton of kootu recipes until now. Kootu is a lentil based gravy dish and has a ton of variations. It goes well with rice or as a side dish for roti. This is the first time I am using fresh watercress leaves and the kootu tasted delicious. You can add cabbage, spinach, green beans, carrot, beetroot, etc. Off to the recipe.
Watercress Kootu
Watercress lentil gravy.
Ingredients:
- To Grind
- coconut - 2 tbsp
- cumin seeds - 1 tsp
- red chillies - 2 - 3 (adjust to taste)
- For Kootu
- watercress - 1 bunch
- oil - 1 tsp
- mustard seeds - 1/4 tsp
- onion - 1/2 cup - chopped
- moong dal - 1/2 cup
- salt - to taste
Instructions:
Cook moong dal and keep aside. Grind coconut, cumin seeds and red chillies. Clean watercress and chop coarsely.
Heat oil and splutter mustard seeds. Add onion and saute until onion is cooked; add the cooked dal, ground paste, salt and chopped watercress leaves.
When watercress is cooked, turn off the stove and serve with rice or roti.
