This is my first attempt with Jicama and salad came to the rescue. Jicama tastes between a turnip and a pear and has a nice crunch to it. You can eat it raw or add to soups, stir-fries, etc.
Jicama Black Bean Salad
Jicama Black Bean Salad.
Ingredients:
- jicama - 1 cup - sliced into matchsticks
- black beans - 1 cup - cooked
- corn - 1 cup - cooked
- tomatoes - 1/2 cup - diced
- onion - 1/4 cup
- avocado - 1
- For Dressing
- lemon juice - 1 tbsp
- olive oil - 1 tsp
- salt - to taste
- pepper - to taste
Instructions:
Mix the ingredients under "dressing" together.
Mix the salad ingredients and pour the dressing over it. Toss well.
