Kale usually reminds me of drumstick leaves. This is a simple gravy dish using lentils that goes well with rice or roti. I have used the instant pot electric pressure cooker to make this. Off to the recipe.
Kale Kootu
Kale Lentil Gravy
Ingredients:
- moong dal - 1/2 cup
- kale - 4 cups - packed (chopped)
- garlic - 2 - 3 pods
- onion - 1/2 cup - chopped
- coconut - 1 tbsp (I used dry)
- salt - to taste
- oil - 1 tsp
- mustard seeds - 1/4 tsp
- red chillies - 2
- urad dal - 1/2 tsp
Instructions:
Cook dal. To the dal, add kale, garlic, onion, coconut and salt. Cook until the kale is done. Mix well.
Tadka: Heat oil and splutter mustard seeds. Add red chillies and urad dal. Saute until the dal turns golden brown.
Add the tadka to the kale-dal mixture.
