I had earlier posted a baked version of masala peanuts that is always a super hit in my house. When I came across a similar recipe in Mallika Badrinath book using the microwave, I had to try it. This would be the way to go if you are making a small batch and do not want to heat up the oven. The peanuts were crunchy and as always it was gone in no time. Off to the recipe.
Peanuts roasted in the microwave.
- oil - 2 - 3 tbsp
- besan - 3 tbsp (kadala maavu)
- rice flour - 1 tbsp
- salt - to taste
- chilly powder - 1/2 - 1 tsp
- water - 2 tbsp
- peanuts - 11/2 cups
Take oil in a microwave safe bowl and heat in microwave for about 4 min. Mix dry ingredients separately.
Mix water and peanuts. Add the dry ingredients to the wet peanuts and mix well.
Add the peanuts to the bowl with oil and microwave for about 6 minutes stirring once in between. Allow to stand for 3 minutes and serve.
Microwave cooking times vary based on microwave. Adjust accordingly.
