It started because I wanted to make almond butter at home. Sadly, no one cared for the almond butter and I was looking for ways to use it up. Spotted this recipe and it looked pretty easy enough as well. The cookies turned out great and were gone in no time . Recipe from here.
Flourless almond butter chocolate chip cookies.
- eggs - 1
- almond butter - 1 cup
- brown sugar - 1/2 cup
- baking soda - 1 tsp
- vanilla extract - 1 tsp
- chocolate chips - 1/2 cup
Preheat oven to 350F. Line baking sheet with parchment paper.
In a bowl whisk the eggs. Add almond butter, brown sugar, baking soda and vanilla extract. Mix well. Fold in chocolate chips.
Scoop the dough using a cookie scoop or spoon and drop by tablespoonfuls onto the cookie sheet.
Bake for about 10 min. The cookies will be soft, but will firm on cooling.
I adjusted the vanilla extract and chocolate chips quantity leaving the other ingredients as is.
I used home made almond butter.
