This lentil rice is a simple protein packed one pot meal that is perfect for week nights. Dump the ingredients in the pressure cooker and you are good to go. You can make an elaborate side like vadai or go with the simple potato chips. Tomatoes add a slight tanginess and the spices give a lot of flavor to the dish. Off to the recipe.
Arisi Paruppu Sadham (Lentil Rice)
Rice with lentils and spices.
Ingredients:
- oil - 2 tsp
- mustard seeds - 1/2 tsp
- cumin seeds - 1/2 tsp
- fennel seeds - 1/2 tsp
- curry leaves - few
- onion - 1 cup - chopped
- garlic - 4 cloves
- tomatoes - 1 cup - chopped
- rice - 1 cup
- green chilly - 2
- toor dal - 1/2 cup - soaked for an hour
- turmeric - a pinch
- salt - to taste
- water - 3 1/2 cups
- sambar powder - 1 tsp - adjust to taste
- cilantro - to garnish
Instructions:
In a pressure cooker, heat oil and splutter mustard seeds. Add cumin, fennel seeds and curry leaves.
Add onion and garlic; when onions are cooked add tomatoes. Saute until tomatoes turn mushy. Add the rest of the ingredients and cook for about 4 whistles or 10 minutes.
Open the cooker when the pressure has released and garnish with cilantro. Serve warm.
