Tasty pulao with quinoa and asparagus.
- oil - 2 tsp
- cumin seeds - 1/2 tsp
- onion - 1/2 cup (chopped)
- garlic - 4 cloves - minced
- green chilly - 1
- asparagus - 2 cups - sliced into 1 inch pieces
- salt - to taste
- turmeric - a pinch
- quinoa - 1 cup
- water - 1 1/2 cups
- cilantro - to garnish
Heat oil and add cumin seeds. Add onions and garlic and saute until onions are cooked.
Add the rest of the ingredients except cilantro and cook until quinoa is done. It takes about 15 to 20 minutes for me. Fluff with fork and garnish with cilantro.
You can also saute the asparagus separately and add when quinoa is cooked. This will retain the crispness of the asparagus.
