This is a healthy and simple fry with sweet potatoes. To be honest, I am not a big fan of sweet potatoes and was stumped when I ended up with two huge potatoes. To my surprise, the potatoes were not sweet as I had feared it to be and the fry tasted pretty good. Green chillies add a lot of heat to the dish and I went overboard just to mask the sweetness. Overall a perfect side to rice. Off to the recipe.
Sweet Potato Poriyal (Fry)
Simple stir fry with sweet potatoes.
Ingredients:
- oil - 1 tsp
- mustard seeds - 1/4 tsp
- urad dal - 1/2 tsp
- channa dal - 1/2 tsp
- curry leaves - few
- garlic - few cloves
- green chilly - 1 - sliced
- onion - 1/2 cup - chopped
- sweet potatoes - 1 1/2 cups - diced
- salt - to taste
Instructions:
Heat oil and splutter mustard seeds. Add urad dal, channa dal, curry leaves, garlic and chilly. When dals brown add the onions and saute until onions are cooked.
Add sweet potatoes and salt. Sprinkle water and cook until done. Serve with rice or roti.
