Basundi is a rich milk dessert and is made by simmering milk and adding flavorings. The only thing that is key to the recipe is patience. The milk has to reduce to half the original quantity and we need to keep stirring it every few minutes and scraping down the sides of the vessel as needed. Result is an extremely flavorful and rich dessert that is sure to please all. The stirring and scraping gives the basundi and nice texture and even though I am not a dessert fan, I cannot stay away from basundi . Off to the recipe.
Rich dessert with milk.
- almonds - 8 - soaked and peeled
- cashews - 7
- milk - 2 cups
- sugar - 3 tbsp
- saffron - a bit
- cardamom - 1
- nuts - few almonds and few pista - chopped
Make a paste of almonds and cashews separately. Use milk if needed to get the blender blades moving.
Bring milk to a boil and simmer until it reduces to about half the quantity stirring every 5 minutes. Now add sugar, almond paste and cashew paste.
Stir and simmer for about 10 minutes. Add saffron and cardamom and simmer for a few more minutes.
Finally garnish with chopped nuts and serve.

It took about 45 minutes to reduce. Now add sugar, cashew paste and almond paste.5. Stir well and simmer for about 10 minutes.6. Add saffron and cardamom. Simmer for few minutes.7.
