This is a fun bowl that is pretty versatile and is also healthy. I am always on the lookout for quinoa dishes and this is one of my favorites. This is like a salad, but very filling. Don’t be alarmed at the list of ingredients because they are mostly stuff you already have or can be easily substituted. Feel free to top with your favorite items and enjoy the bowl.Avocado adds a creamy texture and tofu adds some crunch. Overall a winner in the house. Off to the recipe.
Quinoa Tofu Bowl
Healthy quinoa tofu bowl.
Ingredients:
- Tofu
- soy sauce - 1 tsp
- ginger-garlic paste - 1 tsp
- chilli sauce - 1 tsp
- red chilli sauce - 1/2 tsp (optional)
- lemon juice - 1 tsp
- salt - if needed (soy sauce has salt)
- tofu - 1 box - pressed and cubed
- Quinoa
- olive oil - 1 tsp
- cumin seeds - 1/2 tsp
- quinoa - as needed (I used 1 1/4 cup)
- water - double the amount of quinoa
- Broccoli
- olive oil - 1 tsp
- cumin seeds - 1/4 tsp
- broccoli - 2 cups - florets
- salt - to taste
- soy sauce - 1 tsp (optional)
- Quinoa Bowl
- olive oil - 1 tsp
- lemon juice - as needed
- salt - to taste
- avocado - sliced - as needed
- tomatoes - chopped - to garnish
Instructions:
Prepare Tofu
Mix ingredients for tofu. Add the cubed tofu to it and toss to combine. Let it sit for about 30 min to an hour. Place on a baking sheet and bake in a preheated 350F oven for about 30 - 40 min turning once in the middle.
Prepare Quinoa
Heat oil and add cumin seeds. Add quinoa and water and cook until quinoa is done.
Prepare Broccoli
Heat oil and add cumin seeds. Add rest of ingredients and cook until broccoli is tender.
Assemble the Bowl
Place quinoa in a bowl and toss with olive oil, lemon juice and salt. Top with tofu, brocolli, avocado and tomatoes. Serve.

Top with broccoli, tofu, tomatoes, avocado, etc. Serve.
