This is a simple and healthy condiment using carrots. This was a welcome change after being bored with the usual stir fry, kootu and salad. It is very easy to prepare and takes very less time too. Since carrots and coconut are slightly on the sweeter side, this chutney also tended to be slightly sweet. You can adjust the chillies to compensate as needed. Off to the recipe.
Tasty condiment with carrots.
- For Chutney
- oil - 1 tsp
- red chillies - 3 (adjust to taste)
- coriander seeds - 2 tsp
- carrots - 1 cup - sliced
- coconut - 2 - 3 tbsp
- peanuts - 1 - 2 tbsp (roasted and skin removed)
- garlic - 1 clove
- salt - to taste
- water - as needed to blend
- For Seasoning
- oil - 1 tsp
- mustard seeds - 1/4 tsp
In a tsp of oil fry the coriander seeds and chillies. Remove and fry carrots in the same vessel. Allow to cool and take with the remaining ingredients in a blender.
Blend using just enough water and season with mustard seeds. Serve with rice or roti.

1. In a tsp of oil fry the coriander seeds and red chillies. Keep aside.2. In the same vessel saute the carrots for a few minutes until the raw smell is gone.3. Take the spices, carrots and other ingredients in a blender and blend adding needed water.4. Season with mustard seeds.
