Wishing everyone a happy Diwali. Hope everyone enjoyed the festival with loads of sweets and savories. I made these murukkus over the weekend and the whole process was like a crash course right from preparing to taking pictures before the darkness sets. Thanks to the time change, it now gets dark at 4 pm itself. Anything deep fried has to taste good right and this snack is no exception and the kids enjoyed it. Off to the recipe.
Potato Murukku
Murukku with potatoes.
Ingredients:
- potatoes - 1 medium
- rice flour - 1 1/2 cups
- chilly powder - 1/2 tsp (adjust to taste)
- cumin seeds - 1/2 tsp
- asafoetida - 1/4 tsp
- butter - 1 tbsp (melted)
- salt - to taste
- water - as needed
- oil - to deep fry
Instructions:
Boil the potato and blend using a blender. Mix with the rest of the ingredients except oil and water. Then add water as needed to form a soft dough.
Form murukkus using the single star disc. Heat oil and transfer the murukkus carefully to the oil. When the hissing sound of oil stops, remove the murukku from oil and drain on paper towels.
Allow to cool and store in airtight containers.
