We are heading towards the fall season and some of you might still have a ton of tomatoes from the garden. This is a very easy salad to try with those tomatoes. It is filling, healthy and the farro adds a nice texture to the salad. I have used grape tomatoes, but feel free to use any kind. Off to the recipe.
Farro Cucumber Tomato Salad
Salad with farro, cucumber and tomatoes.
Ingredients:
- farro - 1/4 cup
- olive oil - 1 tsp
- lemon juice - 2 tsp
- salt - to taste
- pepper - to taste
- cucumber - 2 cups - diced
- tomatoes - about 15 cherry tomatoes (use any tomato on hand)
- avocado - 1/2 or 1
- cilantro - 1/4 cup - packed
Instructions:
Cook farro. Mix olive oil, lemon juice, salt and pepper. Toss with farro and rest of ingredients. Serve as is or chilled.
I add farro to boiling water and simmer until farro is cooked.
