A simple, but filling salad with vegetables and garbanzo. Pinenuts add a nice crunch and the salad can be customized based on vegetables on hand. Off to the recipe.

Butter Lettuce Chickpea Salad.
Ingredients:
- lettuce - 1 head
- tomatoes - 1
- cucumber - 1
- carrot - 1
- garbanzo - 1/2 cup - cooked
- pine nuts - to garnish
- For Dressing
- olive oil - 2 tsp
- lemon juice - 1 tbsp
- salt - to taste
- pepper - to taste
Instructions:
Mix olive oil, lemon juice, salt and pepper.
Take all the remaining ingredients and cut into bite size pieces as needed. Pour the dressing over and toss well.
