Farro is a nutritious grain and has a nutty texture when cooked. Summer is almost waning away and I am trying to enjoy the fresh produce as much as possible. This salad is loaded with black beans, corn, tomatoes and avocado. To be honest, although I love to eat salads, I am not in favor of making them. Salads are supposedly a simple dish, but I would rather bake bread than make salad . For that reason I keep my salads really simple with day to day ingredients. I had earlier posted a soup recipe using farro. Enjoy the summer with this healthy, tasty and easy salad. Off to the recipe.
Farro Black Bean Salad
Healthy salad with farro and black beans.
- farro - 1/2 cup
- olive oil - 2 tsp
- lemon juice - 1 tbsp
- salt - to taste
- pepper - to taste
- black beans - 1 cup - cooked
- tomatoes - about 15 cherry tomatoes
- corn - 1 cup
- parsley - 1 tbsp
- avocado - 1 - optional
Cook farro and keep aside. It takes at least 30 minutes for farro to cook.
Mix olive oil, lemon juice, salt and pepper. Toss with farro and other ingredients.

1. Cook farro as per package instructions. I usually bring a pot of water to a boil and add the farro, then simmer until the farro is cooked.2. Cooked farro.3. Strain the water.4. Mix olive oil, lemon juice, salt and pepper.5. Add all the ingredients and toss well.
Tasty salad ready.
