Figs are new to me and muffins seemed to be a good way to experiment with it. Muffins are very easy to make and I have tweaked the recipe with tons of variations and it never fails. These are perfect for breakfast or as a quick snack. The picky eaters never caught the figs in the muffins and enjoyed the snack . Off to the recipe.
Muffins with figs and bananas.
- whole wheat flour - 1/2 cup
- all purpose flour - 1 1/2 cups
- sugar - 1/4 cup
- baking powder - 1 tbsp
- salt - 1/2 tsp
- oil - 1/3 cup
- eggs - 1
- milk - 1 cup
- banana - 3/4 cup - mashed (I used only 1/2 cup)
- figs - 1 cup - chopped
Chop the figs. Mix the dry ingredients and wet ingredients separately.
Add the wet mixture to the dry ingredients and mix until combined. Do not over mix. Fill the muffin cups about 2/3rd full.
Bake in a preheated 400F oven for about 15 minutes until a tooth pick inserted in the center comes out clean.
