Is your garden overflowing with tomatoes? Well, mine was a couple of weeks ago. After making the makhni gravy, tomato pickle-1, tomato pickle-2, fresh salsa and canned salsa I decided to freeze some. You can freeze whole tomatoes or tomatoes cut into chunks, but I decided to go this route after talking with a co-worker of mine. She mentioned the procedure she uses for canning tomatoes and I did the same, but froze it instead. There are a lot of Indian dishes where tomato puree is used and having some in the freezer comes in handy always. Off to the recipe.

Make crushed tomatoes and freeze for later.
- tomatoes - as needed
Blanch tomatoes by dropping them in boiling water for a couple of minutes and then plunging them in cold water. Peel skin and coarsely chop the tomatoes. Allow to rest for half an hour. Strain and puree the tomatoes.
Take in a vessel and bring to a boil. Simmer for 20 -30 minutes. Allow to cool and store in freezer for later.
2 years ago: Strawberry Preserve
1. Blanch tomatoes by dropping them in boiling water for a couple of minutes and then plunging them in cold water.2. Remove the skin.3. Chop them coarsely and allow to rest for half an hour.4. Strain the tomatoes and puree.5. Take in a vessel and bring to a boil and simmer for 20 - 30 minutes.6. Allow to cool and store in freezer for later.
Cooled and ready for freezer.
