Day 4 of the blogging marathon with theme ‘Rasam”. This is another extremely simple rasam to add to the collection and I learnt it from my MIL. One thing to note is that the more this rasam sits, the more bitter it gets. So it is good to prepare a small quantity. Sour tamarind and the bitter neem flowers give a unique flavor to this rasam. Off to the easy recipe.
Neem flowers.
Ingredients
Small lime size tamarind (About 1/2 cup of tamarind water)
Salt
Pinch of asafoetida
1/2 tsp oil
1.5 tsp neem flowers
2 red chillies
Method
Add 2 cups of water to the tamarind water and add asafoetida and salt.
Bring to a boil and simmer for 5 – 10 minutes until the raw smell of tamarind is gone.
Heat oil and add neem flower and red chillies.
Fry the neem flower until it takes a reddish brown color.
Add the neem flower and chillies to the tamarind water.
Neem flower rasam ready.
