Final day of the blogging marathon and my theme is “Picnic Food”. For the last day I have been paired with Padma Rekha of PlaintainLeaf and I chose this sandwich from her blog. What is more apt for a picnic than a sandwich right?
To be frank I am not a picnic person. Picnic time is meant to be a relaxing time and that is something which I am not good at as I cannot sit idle, thanks to my grandma’s genes . But both kids and K love to go to the lake or park and I tag along. Until now the only food which I have taken for picnic is lemon rice, tamarind rice or chapatis .. couldn’t part with the typical Indian food which I used to carry to school. For the same reason I could not consider sandwich as a lunchbox item .. weird I know
But with the kids growing up I guess we have to change and now we do have sandwich on the menu for dinner sometimes. With my spinach and garlic event I was excited to see this sandwich in Padma’s blog and it was pretty simple to put together and very healthy too. Off to the recipe.
Collect the main ingredients together. Do you see the icy layer on the chilly? Well that is because I freeze the chililes when I get them home so they last longer. Remember, Indian store is 3 hours away
Take spinach, garlic and chilly in a food processor and chop finely.
Heat olive oil in a pan. Add the chopped mix, corn and salt to taste.
Turn off the stove when the spinach starts to wilt. It just takes few minutes. Add cheese if using.
I am sure everybody knows how to assemble the sandwich, but a peek into my way . Take a bread slice and spread the mixture.
Place the other slice over it.
Heat butter or oil in a pan or griddle and toast the bread until golden brown.
That is it. Now off to the lake with the sandwich .. I sprinkled some parmeson cheese for color.
