This is week 10 of blog hop started by Radhika and this week I am paired with my buddy Anu of AnuzHealthyKitchen. She has a wonderful blog with a lot of unique recipes and I love the use of whole grains in most of her recipes. For this blog hop, I decided to keep it simple and healthy and went with my all the time favorite carrot milk shake. I have made this before with almonds, but used sugar. This time I tried it with honey as mentioned in the recipe and loved it. Anu has used almond powder, but I blended soaked almonds along with carrots. The almonds take a while to grind and it is better to grind it first into a paste and then add the carrots.
Interesting incident while taking pictures. I was outside with my daughter and there was this kitten which kept running under the table and between my legs and I had to wait so it does not topple up anything on the table. The kitten seemed to be more amused with my daughter and kept coming back and I finally had to get my daughter inside the house to get some decent shots
. Now off to the simple recipe. Recipe adapted from Anu.

Ingredients
2 large carrots
About 15 almonds soaked and peeled
4-5 tbsp honey (adjust to taste)
1.5 cups low fat milk (use more or less depending on how thick or thin you like it)
Method
Pressure cook or steam the carrots and keep aside.
Soak the almonds in hot water for 30 minutes and then peel the skin off.
First grind the almonds with milk to a smooth paste.
To the almond paste add the cooked carrots.
Add honey.
Blend well adding milk as needed.
Tasty and healthy milkshake ready.
