If you are looking for a simple and quick weeknight dinner, then you have to give this rice a try. This is a simple rice that is mildly spiced with cumin seeds and loaded with vegetables. If you are pressed for time, you can also use frozen vegetables. The rice is perfect for little kids who do not like spicy stuff. Pair it with a spicy side dish or just plain pepper papad. Simple rice with cumin seeds and vegetables.
- oil - 1 tsp
- cumin seeds - 1 tsp
- basmati rice - 2 cups
- carrots - 1 cup - diced
- beans - 3/4 cup - sliced thinly
- peas - 1/2 cup (I used frozen peas)
- green chilly - 2 (adjust to taste)
- salt - to taste
- water - 4 cups
- cilantro - to garnish
Heat oil and add cumin seeds. Add the rice and saute for a couple of minutes.
Add the remaining ingredients except cilantro. Cover and cook until the rice is done. Fluff the rice with a fork and garnish with cilantro.
Serve with pickle/raita/chips etc.
