Shrikand is basically a thick yogurt based dessert that is sweetened with blueberries, strawberries and so on. It is delicious, rich and creamy. I have used fat free Greek yogurt and that stuff is really thick I should say. I am happy to finally use up the can of mango pulp that had been lying in the basement for a few months. You can also peel fresh ripe mangoes and blend and use that instead of the store bought pulp.
Part of the pulp went into muffins, some went into this dessert and some is in the fridge to make this delicious lassi later. This is an easy peasy dessert that can be whipped up in a jiffy if you have Greek yogurt. Even otherwise it is simple, but you have to strain plain yogurt overnight to get the thick yogurt. Mango Shrikand
Delicious yogurt based dessert.
Ingredients:
- greek yogurt - 1 cup
- mango - 1/2 cup (puree)
- sugar - 1 tbsp (adjust to taste)
- cardamom - 1 (powdered)
- pista - to garnish
Instructions:
Whisk all ingredients except pista. Garnish with pista and serve.
To get thick yogurt, take yogurt and place in a muslin cloth over a colander and let it drip overnight in the fridge. I have the pictorial here. For 1 cup hung yogurt I used 4 cups fat free yogurt.
