Although summer is waning away that should not stop you from trying this salad. It is hearty with the beans and creamy with the avocados. My friend Rachel mentioned this salad during the summer and I immediately had to try it out since it had our favorite ingredients. You can use canned beans to simplify the process greatly, but I decided to cook the beans at home. I normally soak a ton of beans, cook and store them in ziploc bags in the freezer. This makes it easy to add them to salads, stir fries and other side dishes. This salad is pretty versatile like most salads and you can change it per your needs. Off to the recipe.
Black Bean Corn and Avocado Salad

Healthy salad with black beans, corn and avocado.
Ingredients:
- For Salad
- black beans - 2 cups - cooked
- corn - 2 cups
- onion - 1/2 cup - chopped
- tomatoes - 1/2 cup - chopped
- avocado - 1
- cilantro - 1/4 cup
- For Dressing
- lemon juice - 2 tbsp
- olive oil - 1 tsp
- salt - to taste
- pepper - to taste
- chilly powder - a pinch
Instructions:
Mix dressing ingredients together. Take the salad ingredients in a bowl and pour the dressing over it. Toss and serve immediately or chilled.
