I made this when raw tomatoes were in abundance in the garden. The season is pretty much over and I am swimming in tomatoes right now. You must have heard of fried green tomatoes. Rather than breading and frying them, I decided to make it the Indian way. It was a welcome variation from the usual bajji’s that are made with onion or potato. There was a hint of tanginess from the tomatoes and everyone loved it. Off to the recipe.
Raw Tomato Bajji
Tasty deep fried snack with raw tomatoes.
Ingredients:
- besan - 1/2 cup (kadala maavu)
- all purpose flour - 1 tbsp
- rice flour - 1 tbsp
- salt - 1/2 tsp (adjust to taste)
- chilly powder - 1/4 tsp
- ghee - 1 tsp
Homemade ghee can be made following this link
- asafoetida - a pinch
- baking soda - a pinch
- tomatoes - 2 (raw tomatoes)
Instructions:
Mix besan, all purpose flour, rice flour, salt, chilly powder, ghee, asafoetida and baking soda. Using water form a batter that is not too thick nor thin.
Heat oil. Slice the raw tomatoes. Dip each slice in the batter and drop them in the oil. Bajji's are done when both sides are cooked and golden brown. Serve with chutney.
1. Serve bajjis immediately as they tend to lose their crispiness soon.
2. Tomatillo's can also be used after removing the outer skin.
