We are getting close to the end of zucchini season and I am pretty happy about the zucchini recipes I have tried this summer, thanks to Rachel. This recipe has been in my book for more than 5 years and it was from my daycare provider. I asked her for the recipe because she mentioned that my son loved it at daycare and of course this was quite a few years ago when he was a toddler. I safely tucked the paper in my diary and forgot about it and thanks to blogging, I am now dusting my recipe diary and cookbooks and getting out of my comfort level. This is a very easy recipe and tasty too. I have made adjustments to it to include flax and reduced the amount of cheese. Off to the recipe.
Zucchini Cheese Patties
Tasty patties made with flour, zucchini and cheese.
Ingredients:
- whole wheat flour - 1/2 cup
- all purpose flour - 1/2 cup
- cheese - 1/2 cup - I used mozarella
- spring onion - 2 tbsp - sliced thinly
- zucchini - 2 cups - shredded
- flax meal - 1 tsp
- salt - 1/4 tsp
- water - 1 tbsp
- butter - as needed - oil can also be used
Instructions:
Take all purpose flour, wheat flour, spring onions, cheese, zucchini, salt, flax meal in a bowl. Mix well using a tbsp of water if needed.
Heat a griddle and drizzle oil or butter over it. Drop the batter by spoonfuls on it.
Cook for a couple of minutes and flip over. Cook the other side for a couple of minutes. The patties are done when both sides are golden brown. Server warm.

I actually dont see whats healthy in these zucchini patties??
Whole wheat flour wwf= has gluten, anti nutrients like lectins, phytates and eating items from wwf increases blood sugar.
All purpose flour apf= worst processed food, has all of the above and nutritionally zero!!
Cheese= is good only if its made from raw grassfed cheese, if you read labels commercially available cheese are overly processed with nasty chemicals in them!!
Zucchini= not really nutritious so to speak, just high water content.
I think what she meant was ‘comparatively’ healthy. This is defintely healthier than your regular patties anyday
Exactly what I was going to say. This is a healthier version of the original recipe that was given to me. I skimmed it down and also included flax and so on.
