With summer in full form in many parts of the world and the gardens flourishing with vegetables, this salad is a perfect way to enjoy the season. Colorful vibrant veggies and pasta combine with Italian salad dressing in this salad. I was introduced to this salad by my co-worker and have been hooked on it ever since. This salad is so flexible in that any vegetables or pasta can be used. You can use desired quantity of Italian salad dressing. Overall there is no measurement in this recipe although I have provided with the quantities I used.
The recipe is so simple and can be written in 2 sentences .. now how easy is that. But to add some color here we go with the pictorial.
3 servings pasta
2 carrots (1 cup)
1/2 bell pepper (1 cup)
1/2 cucumber (1 cup)
Red Onion (1/2 cup)
1/2 Red bell pepper (1/2 cup)
1 cup low fat Italian salad dressing
Cook pasta as per package instructions and set aside. Penne or rotini pasta works best for this salad.
Next goes the bell pepper.
Next goes red onions. I would suggest to use red onions over yellow onions as the red onions have a nice sweet taste.
The red bell peppers go in next.
Add the cooked pasta.
Add salt and pepper as needed.
I have used 1 cup salad dressing as I like it tangy. Adjust according to taste.
Toss it all together. Refrigerate and serve chilled.
Easy peasy simple and refreshing summer salad ready. Love the freshness and the color of the veggies in the salad.
