Day 3 of the blogging marathon and the theme is “Different ways to use the same ingredient”. I have chosen spinach and will post two spinach recipes this week.
We all know the health benefits of spinach and I try to include it in our cooking as much as possible. Any time spinach goes on sale I have at least 4 bags of it in the fridge, thanks to K. This simple stir fry is a very easy way to include spinach and it combines the goodness of both spinach and garlic. Even though I grew up eating this dish, I did not pay much attention to the ingredients until my mom came over to help with the new baby. She insisted that I include garlic every day and this was the only stir fry where I could handle whole pieces of garlic and this was on the menu every day. The addition of peanut powder was also suggested by my mom in one of my recent conversations with her. The peanut powder added a nice touch of sweetness to the already pleasant dish.
Ingredients
1 tsp oil
1/2 tsp mustard seeds
1/2 tsp urad dal
4 red chillies
1 small onion
10 garlic cloves
1 16oz pkt frozen spinach
Salt to taste
1/4 cup peanuts roasted and skin removed (optional)
Method
Let us get the peanuts ready first. Roasting of peanuts can be done in stove top or in the microwave. I roasted on stove top.
Let it cool and remove the skin of peanuts. Take in a mixie.
Powder the peanuts coarsely.
Next heat oil in a pan and add the seasonings mustard seeds, urad dal and red chillies. Next add the onion and garlic cloves.
Saute for few minutes until onions are cooked.
Add the spinach and salt and allow to cook.
When spinach is cooked sprinke the peanut powder.
Mix well.
That is it. Tasy and healthy spinach stir fry ready.

Tips
1. For stir fry I normally use frozen spinach although fresh can also be used.

We love spinach stir fry and I always have at least a pack in my fridge. I always use fresh spinach and never tried peanut powder in it. Will try it next time I prepare the stir fry.

I love dry curry versions of any greens. Your version looks delicious though I can't stand the smell of garlic.

Spinach curry looks fabulous. My MIL makes similar stir fry with lots of garlic and it tastes awesome. Adding peanut powder is a nice trick. Will try next time.

Never used peanut with greens or any poriyal…your poriyal looks so inviting might tasted yummy with peanut flavor…from next time will try this way!!!
