Roasted Pepper Quinoa Salad | Cooks JoyA simple, but healthy salad featuring quinoa. Truth be told, I go blank when I am in charge of making salads for any potluck. I will gladly swap for making bread instead :) . But, I do try to include salads in our meals off and on. Roasted bell pepper adds a ton of flavor and all the ingredients blend well together in this salad. Quinoa is loaded with protein and makes the salad very filling. Overall a keeper recipe for us. Off to the recipe.

Roasted Red Bell Pepper Quinoa Salad

Salad with quinoa and roasted red bell peppers.

Ingredients:

Instructions:

Cook quinoa and keep aside. Roast bell pepper as shown here. Chop bell pepper into bite size pieces.

Toss quinoa, bell pepper and rest of the ingredients and serve.
