Recently “bountiful basket” site opened up in our place and I have been purchasing vegetables and fruits from the site. We do not know what is in the basket until pickup day and that makes it even more interesting. One such week we ended up with avocados and cherry tomatoes along with a bunch of other fruits and vegetables. Decided to make a salad and tossed it along with some corn.
I normally steam the corn since that is easy, but this time chose to grill it. I believe that added a ton of extra flavor to the salad. Overall we loved the salad and this is perfect for the summer when you get fresh corn that is zillions of times tastier than the store bought corn. Recipe adapted from here.
Grilled Corn, Tomato and Avocado Salad
Healthy salad with corn, tomato and avocado.
Ingredients:
- For Salad
- tomatoes - around 20 grape tomatoes
- corn - 2 - 3
- avocado - 1
- cilantro - 1 - 2 tbsp
- Honey Lime Dressing
- garlic - 1 clove - minced
- honey - 1 tsp
- olive oil - 2 tsp
- lemon juice - 2 tsp
- salt - to taste
- pepper powder - to taste
- chilly powder - a pinch (optional)
Instructions:
Grill corn and slice the kernels.
Mix ingredients for salad dressing and toss with the corn and other ingredients.
