A few weeks ago we ended up with a ton of bell peppers from the garden and I was looking up to see if there was anything interesting that can be made with it. This recipe caught my eye since I have not made condiments with bell pepper. The slight hint of garlic along with lemon juice added a ton of flavor. So far, we have used it with burritos and it certainly adds a punch to the usual burrito. It hardly takes minutes to make if you are using a food processor and you can also chop using the knife. Remember that a little goes a long with with this condiment. Adapted from here. Off to the recipe.
Green Pepper Relish
Simple condiment with bell peppers.
Ingredients:
- bell pepper - 1 (about 1.5 cups chopped)
- jalapeno - 1
- garlic - 1 clove
- spring onion - 3 (about 1/2 cup chopped)
- cilantro - 1/2 cup - packed
- olive oil - 1 tbsp
- salt - to taste
- lemon juice - 1 tbsp
Instructions:
Chop the vegetables and then add salt, olive oil and lemon juice. Serve over burritos, sandwiches, etc.

Lovely relish and it will also be great in between bread slices and stuffed with other ingredients as well. Never really thought how bell peppers are so perfect for relish until I noticed this simple dish.
