Summer makes me happy for various reasons and one of them is the fresh vegetables from the garden. This time we planted tomatoes, bell peppers and okra and some of the plants have been producing vegetables already. Colored peppers always seemed like a delicacy and we buy them very rarely. This time I decided to make something simple and the salsa was born. I made it chunky first and then used the food processor for the second batch. You have to let the salsa sit for a few minutes for the chunky type particularly. I liked both, you make your pick. Off to the recipe.
Colored Pepper Salsa
Salsa with colored peppers.
Ingredients:
- bell pepper - 1/4 cup each orange, red and yellow peppers
- tomatoes - 1/2 cup (1 roma tomato)
- onion - 1 tbsp - chopped
- jalapeno - small piece
- lemon juice - 1 tbsp
- salt - as needed
- cilantro - 1 tbsp
Instructions:
Method 1 : Chunky Salsa
Chop peppers, onions, tomatoes and jalapeno. Mix in lemon juice, salt and cilantro.
Method 2: Using Food Processor
Puree peppers and tomatoes in a food processor. Add chopped onion, jalapeno, lemon juice, salt and cilantro.
Serve with chips.
