Having used only the cheddar cheese and mozzarella cheese for the past few years, feta was a big jump for me. I finally mustered the courage to pick up a big box of feta cheese from the store. Since I stay away from cheese, I was skeptical with my decision as to how to finish up the box. But those doubts flew when I tasted it and I instantly knew that everyone at home would love the creamy feta.
My daughter wanted to eat it on its own and the others enjoyed the salad. Crispy cucumbers and onions tasted great on its own with the dressing, but the feta cheese took it to a whole new level. It added creaminess and richness to the salad and I will be making more of this in the coming months. Summer is the time for fresh vegetables and I am sure everyone loves simple salads with no fancy ingredients. Off to the recipe.
Crunchy salad with cucumbers.
- For Salad Dressing
- lemon juice - 2 tsp
- olive oil - 1 tsp
- salt - to taste
- pepper - to taste
- For Salad
- cucumber - 2 cups - thinly sliced
- onion - 1/4 cup - thinly sliced
- feta cheese - as needed
Mix the dressing ingredients together and toss with the sliced cucumbers and onions.
Sprinkle feta cheese on top and enjoy.
1. Tomatoes can also be added.
