We just got back from the open house for my 1st grader and here I am all overwhelmed at the thought my little boy is growing up and not so little anymore. Time flies fast and I still feel it was only yesterday we walked him to preschool. Added to that we registered the 3 yr old for preschool and she is still my baby. Both combined has made me feel pretty low today. Parenting is hard !!.
Back to the recipe .. Parathas and me are not too close. I do make them, but not on a regular basis. I think that is partly because it was not common in my house when we were kids. This layered paratha has been on my list for a really long time and I finally got to it. With some tips this paratha can be made very easily. We also had friends for dinner that night and they loved it too. Remember more the oil, more the flakiness.
The parathas were soft and flaky and it was an instant hit with even my kids. Now we all know how hard it is to satisfy kids. Off to the recipe.
Ingredients
3 cups all purpose flour
2 tbsp oil
Salt
Notes
1. First we need to roll it paper thin and transparent.
2. Next we need to roll it thick to keep the folds. If we roll it thin, the folds will be gone.
Yield
1 cup flour – About 4-5 parathas
Method
Take the flour in a bowl.
Add 2 tbsp of oil to the flour.
Mix to form a crumble.
Using water make a stiff dough.
Knead well for around 5 minutes. Let the dough rest for an hour.
The dough is all rested and ready for rolling.
Take a small ball of dough. We need to roll it very thin and then form pleats. Start rolling.
Keep rolling until it is transparent. It is ok if it tears a bit here and there.
Apply oil all over the rolled paratha. More the oil, more the flakiness.
Start forming pleats from one side. You basically keep making folds like you do the pleats for
sari.
Get the idea?
Make a pinwheel as shown starting from one end.

Now roll the pinwheel into a thicker circle. Can you see the folds?
Place on tawa. Dry roast first.
Flip over. Apply oil.
Flip over again. Apply oil.
Cook until both sides are golden brown.
Yummy and flaky parathas ready. We had it with simple onion-tomato curry.

Nice recipe.. the lachha paratha sure looks tempting. Have you ever tried fish with lachhca paratha. Sure an unconventional combo but when used the right spices, fish tastes like heaven. Few days back i tried marinated fish in Mumbai. Very delicious.
its just a waste of time. I tried it myself followed each step but then to it didn’t tasted like the real south Indian restaurants laccha paratha….

Parathas. These finished ones are great, I suppose the "pleating" and then the pinwheel incorporates air to make them airy and fluffy.
I had to go over it a couple times from the photograph of the rolled out thinly dough with the hand over it. The next picture showed strands intertwined and I got confused. My spouse says to just fold a small pleat from the edge, reverse a fold etc until all rolled up.
This might be too advanced for me right now. And who is Sari? CM.
“sari” the traditional indian dress….will be pleated before tucking the pleats to the long skirt….

Hi Vardhini, My mother-in-law often talks about how someone in their old apartments would make this very well. I though it involved folding and refolding, but pleats looks like it is manageable and not too time taking. I make simple rotis often, so will give this a try and let you know.
