Don’t we all love recipes where we just toss things together. This is one such recipe and a perfect treat for all cucumber lovers. Summer is here and in a few weeks some of you might end up with an abundance of cucumbers in the garden. The same happened to me a few years ago and my friend gave me this recipe. Having made only kootu or raita with cucumber, this recipe sounded refreshing.
It was an instant hit the first time itself and we loved it. It has become a regular at home now. This can be used as a dip for chips or can also be a small side salad. There is no cooking involved and that is my favorite part 
. Off to the colorful and refreshing salsa.
Ingredients
2 medium cucumbers peeled, seeded and chopped
2 medium tomatoes
1/2 cup chopped green bell pepper
1 jalapeno seeded and chopped
1 small onion chopped
1 garlic clove minced
2 tbsp lime juice
1 tsp minced fresh parsley
2 tsp minced fresh cilantro or additional parsley
1/2 tsp dill seed
1/2 tsp salt
Method
Chop all vegetables into small pieces. Toss them together.
Cucumbers.
Tomatoes.
Onions.
Bell peppers.
Cilantro and parsley. I used extra cilantro instead of parsley.
Salsa is best served chilled. We had it with chips. The fresh vegetables along with the herbs and lime juice made this a refreshing and perfect salsa for the summer.
