Aloo Paratha (Potato Flatbread)

Paratha is an Indian flat bread and I have posted a ton of varieties here. “Aloo” means potato and this is a flatbread made with flour and mashed potatoes. You can add most vegetables or dal to make parathas. I have already posted a version of nutritious aloo paratha here. The difference in this is that you can add the mashed potatoes to the flour and knead it in rather than stuffing the filling like we usually do for parathas. I saw my SIL do this when I visited her and found this method to be easier. Parathas are best served with pickles, but you can use any side dish of choice. Off to the recipe.

Indian flatbread with flour, potatoes and spices.
Mix all the ingredients except oil and water. Knead well and form a soft dough using water if needed. Allow dough to rest for about 30 minutes.
Divide dough into 16 pieces. Follow the steps in this recipe and roll out each piece.
Heat a griddle and place the rolled paratha. Flip over in a minute or so. Drizzle a tsp of oil and flip over again in a minute or so. Drizzle oil again.
When both sides are golden brown, remove from griddle and serve warm with pickle or side dish of choice.
