The cookbook where I got this recipe from had been lying in the cupboard for years and thanks to blogging I am finally starting to use it. This sandwich is very easy to put together and takes only minutes to cook. I had bought pinenuts to make pesto a while back and it was sitting in my pantry and I chose this dish mainly to use pinenuts. Those nuts are real creamy and tasty. This is actually intended to be a salad, but we liked it better as a sandwich.
Spinach and garlic are a wonderful combo and the addition of pinenuts and raisins gave a sweet and creamy flavor to the sandwich. You could omit the pinenuts and go with just spinach, garlic and raisins. Enjoy the healthy sandwich friends. Off to the recipe. Recipe slightly adapted from “Vegetarian” cookbook by Linda Fraser.

Ingredients
2 tsp olive oil
1/4 cup pine nuts
3 cups fresh spinach
2 garlic cloves
1/4 cup raisins soaked in hot water for 30 minutes
Salt
Pepper
Method
Soak the raisins in hot water for 30 minutes.
Heat olive oil in a pan and add pine nuts.
Toast until the nuts take a light brown color.
Add spinach and garlic.
Saute for a minute or 2 until the spinach wilts.
Add the soaked raisins.
Add salt.
Add pepper.
You can top with some croutons and have as a salad instead.
