Parathas are Indian flat bread and are very versatile. I once ended with a ton of leftovers of dal makhani and did not want to freeze it. Was stumped for a while and parathas came to the rescue; the dal got transformed into something filling and tasty. There were no complaints from the family and even the picky eater ate happily. Most dals can be mixed with the flour and made into parathas. Since the paratha has all the flavor from the dal makhani, you can just have it with pickle. Off to the recipe.
Dal Makhani Paratha
Indian flat bread with dal makhani
Ingredients:
- dal makhani - 2 cups
- whole wheat flour - 4 cups
- salt - to taste
- cilantro - 1/2 cup - packed
- ajwain - 1/2 tsp
- water - as needed
- oil - as needed
Instructions:
Dal makhani can be prepared using this link.
Mix all ingredients except water and oil. Then, add water as needed to form a soft and pliable dough. Let the dough rest for 30 minutes.
Pinch a small portion of the dough. Roll into a circle. Smear a tsp of oil over it. Fold it over into a semi circle and then fold it once again to form a triangle. Roll the triangle out.
Heat a tawa and place the rolled paratha. Flip over in a minute or so. Drizzle a tsp of oil. Flip over again in a minute or so. When both sides are cooked remove from tawa and serve with pickle or any side dish of choice.

That is a delicious paratha Vadhini. I make parathas with leftover dals quite often but transforming dal makhani into a paratha is a great idea. Will try it out some time.
