Kuruma is usually a coconut based rich gravy, but this is a simple and healthy version of the same. Instead of grinding the spices and coconut like we normally do for kuruma, this recipe uses a ready-made pappula podi (powder) that gives the dish the thickness and flavor. You can make this powder in bulk and keep in air tight containers. Any vegetable of choice can be added. Kuruma goes well with rice or flat bread. Off to the recipe.

Gravy with vegetables and spices.

Homemade papdi can be made following this link .
Heat oil and add cloves, cinnamon and fennel seeds. Add onions, chilly and ginger-garlic paste.
When onions are done add the rest of the ingredients except cilantro. Cook until the vegetables are done and garnish with cilantro. Serve with rice or roti.
