When I started this blog everyone in the family were excited but my sister was super excited. She has been very supportive with her feedback and she has also been kind enough to send me her favorite recipes to post. This is one such recipe which I tweaked a bit based on the ingredients and time on hand. It turned out awesome and a must try for mint lovers. Here it is for my sister who is supporting me from back home.
Ingredients
1.5 cups basmati rice
1 bunch of mint leaves cleaned and washed
1 small onion
1 small tomato
3 green chillies
3 garlic cloves or 1 tsp garlic paste
Small piece of ginger or 1 tsp ginger paste
Vegetables of choice
Salt
Clove and cinnamon
1 tbsp oil
Method
Soak the basmati rice in water for atleast 30 minutes
Take the mint, chillies, ginger and garlic in a blender and grind.
Pour oil in the pressure pan. Add cloves, cinnamon and onion. When the onions are cooked add the ground mixture. Saute the mixture for few minutes.
Now add the tomato, vegetables (I used carrots, potato and peas) and rice. Next add 3 cups water. Add salt. Close the pressure pan and let it cook. I do not put the weight valve on. Turn stove to simmer when you see steam coming out.
Say 10 minutes later open the pressure pan. Mmmm .. do you get the fresh aroma of mint leaves at this point? Fluff the rice a bit and mix it. Do not over mix as the basmati rice tends to break easily.
That is it .. simple right. Yummy fragrant mint pulao ready to be served with raita or pickle of choice. We had it with okra raita.
Tips
1. Any vessel can be used. After pouring water and adding salt the mixture can also be transferred to the rice cooker.
2. If using ginger-garlic paste do not add it to blender. Just add it when the mint mixture is added.
