It felt great this weekend with the temperatures in the 80s and the kids had a blast outside. For this month Dish-it-out the ingredients are carrots and paneer and I decided to make these tasty carrot and paneer bondas. I also used the kuzhi paniyaram pan (Aebleskiver pan) instead of deep frying to make it healthy. Paneer added a nice creaminess and my kids loved it. These are easy to make and best when warm. Off to the recipe.

Carrot Paneer Bonda
Healthy snack with carrot and panner.
Ingredients:
- oil - as needed (1/2 tsp per bonda)
- For Batter
- besan - 1/2 cup (kadala maavu)
- rice flour - 1/4 cup
- chilly powder - 1/2 tsp
- salt - to taste
- water - 1/2 cup
- For Filling
- carrots - 3/4 cup - shredded
- potatoes - 3/4 cup - mashed
- paneer - 1 cup - crumbled
- chilly powder - 1/2 tsp
- salt - to taste
- chaat masala - 1 tsp
- cumin seeds - 1/2 tsp
Instructions:
Mix all the ingredients for batter and prepare a batter that is not too thick nor thin.
Mix all the filling ingredients and form small balls and keep aside. Dip each ball in the batter and make sure it is coated on all sides with the batter.
Heat a kuzhi paniyaram pan and add about 1/2 tsp of oil in each groove. Place the balls in the groove and cook until all sides are golden brown. (Flip the balls halfway through.)
