Seppankizhangu / Arbi Fry

This is a simple fry with seppankizhangu(arbi) that goes well with rasam rice. As a picky eater, I was not fond of arbi as a kid. Things change and these days I seem to like this fry more than potatoes. Due to the lacking of Indian stores in my area, some vegetables become even more of a delicacy and arbi is surely one
. You can add a sprinkle of pepper powder at the end to add more punch to the dish as well. Off to the recipe.

Arbi coated with spices and roasted.
Boil arbi until tender. Peel and chop into pieces. Mix with rest of ingredients except oil.
Heat oil in a pan and add the arbi. Roast for about 10 - 15 minutes until the arbi is crispy on the outside.

3. Mix arbi with rest of ingredients except oil.
4. Heat oil in a pan and add the arbi.
5. Fry for about 10 - 15 minutes until the arbi is roasted and crispy on the outside.
