Ragda Patties (Ragda Pattice)

Ragda is a gravy made with peas and spices. This is one of India’s famous street food and I had this on my list forever, but was postponing it because I had no sev on hand and there is no Indian store near by. Finally, made it last weekend and it was a bit time consuming because I made the chutney, sev, ragda and patties all on the same day. The end result was totally worth it though
. Each bite of the dish had sweetness, tanginess, spiciness and so on. The kids enjoyed it and we did too. The next time I would probably make the sev in advance. You can also simplify by using store bought sev and chutneys. Off to the recipe.

Preparing Ragda
Heat oil in a pressure pan or cooker and add cumin seeds. Add onion, green chilly and ginger paste. When onions are cooked, add the rest of the ragda ingredients except cilantro.
Close and pressure cook for about 15 minutes. When pressure is released, mash the ragda with a potato masher. Garnish with cilantro and keep aside.
Prepare Patties
Mix all the patty ingredients except oil. Form small patties. Heat a griddle and shall fry the patties until they are golden brown on either side.
Prepare Ragda Pattice
Place one or two patties in a shallow plate. Pour a generous amount of ragda over it. Top with topping ingredients. Serve immediately.
2. When onions are cooked add the rest of the ingredients under "ragda" except cilantro.
3. Close and pressure cook for 15 minutes. When pressure is released, mash the ragda with a potato masher. Ragda ready. Garnish with cilantro.
4. Meanwhile, take the ingredients for patties except oil in a bowl.
5. Mix well.
6. Heat a griddle and add a tsp of oil. Make small patties and place on the griddle.
7. Flip over in a few minutes. When both sides are browned, remove from griddle.
8. Take the patty in a plate.
9. Add a generous amount of ragda over it.
10. Top with green chutney and tamarind chutney.
11. Top with onion, tomatoes, cilantro and sev. Serve immediately.
