Flour Tortillas

I had recently posted corn tortillas and was talking to my friend about it. She then talked about the soft and tasty flour tortillas that her friend makes and also shared the recipe with me. The recipe sat in my book for a couple of months and finally I made it. Once you taste these fresh tortillas I do not think you will want to go to the store bought tortillas anymore. They were fresh, soft and tasty.
I usually stock up on tortillas from bountiful baskets, but now I can also make it at home if time permits. The good thing is that these tortillas cook very fast and the whole process took about 15 minutes or so to cook 10 tortillas. Off to the recipe.

Fresh homemade flour tortillas.
Mix all purpose flour, baking powder, salt and oil. Using water form a dough and knead a few times. Do not over-knead and allow dough to rest for at least 15 minutes.
Divide the dough into balls. Roll each into an 8 inch circle and place on a hot griddle. When you see raised spots flip over and let the other side cook for a few seconds.
We want light brown spots and soft tortillas. If you cook longer the tortillas will turn crisp.
2. Using water form a dough.
3. Knead a few times and let the dough rest for 15 min at least.
4. Divide dough into small balls.
5. Roll into an 8 inch circle and place on a hot griddle. In less than a minute you should see raised spots on the surface.
6. Flip over and let the other side cook for a few seconds. Tortillas ready.
