Moong Sprouts Masala Vadai (Mulai Payaru Vadai)

“Vadai” is a deep fried snack made with lentils or legumes. I had some extra sprouts sitting in the fridge and decided to use it for these vadais. This post explains how to make sprouts. If you are pressed for time you can make this recipe with just the soaked moong dal too. These make great party snack if you plan ahead of time and will be a favorite with both kids and adults.
Vadai has a crunchy exterior and is soft on the inside. It is versatile and you can add ch0pped spinach, finely chopped cabbage and so on. Off to the recipe.

Deep fried fritters with moong sprouts.
Refer here to make moong sprouts.
Blend sprouts, red chillies, fennel seeds, garlic and salt coarsely. Add cilantro and onion and mix.
Heat oil. Make small balls of the mixture and flatten it. Add the flattened vadais to the oil gently and cook until both sides are golden brown and crispy.
2. Blend coarsely.
3. Add onion and cilantro.
4. Mix well.
5. Make small balls of the mixture.
6. Flatten it.
7. Heat oil and gently drop the flattened vadais into the hot oil.
8. Cook until both sides are golden brown and crispy.
