Hope everyone is enjoying the summer and it is hard to believe that it is almost a month since the kids started vacation. While looking for recipes to finish up the last batch of strawberries in the fridge, I stumbled upon this recipe and I was surprised to see apple as an ingredient. Pectin is normally used in jelly and jams to help them set and apple has it naturally. The resulting jam was of the right consistency and it took minutes to put together. Off to the recipe. Recipe from here.

Easy strawberry jam (no pectin).
Place strawberries, sugar and apples in a vessel over medium heat. When the sugar dissolves, simmer for about 20 minutes.
Add the lemon juice and turn off the stove. Allow to cool and store in refrigerator.
2. Mix well.
3. In about 5 minutes, you can see the sugar melting and the mix coming together.
4. Simmer for about 20 minutes.
5. Add the lemon juice and turn off the stove.
6. Allow to cool and store in refrigerator.
