Spinach Dal Poriyal (Spinach Lentil Stir Fry)

The family loves spinach and I always look out for new ways to cook spinach. My mom usually makes something similar with cabbage and I decided to use spinach. It is a perfect accompaniment to spicy kuzhambu since this fry is mildly spiced. I normally have a few bags on spinach in the freezer and that makes it easy to put this dish together. The bonus is that my kids like it too.
Have a safe and fun filled holiday weekend everyone. Off to the recipe.

Healthy fry with spinach and dal.
Cook the toor dal and keep aside.
Heat oil and splutter mustard seeds. Add red chillies, onion and garlic. When the onion is cooked, add the spinach and salt.
When the spinach is cooked, add the cooked dal and simmer for 5 minutes. Turn off the stove and enjoy the fry with rice or rotis.
2. Add the onion and garlic.
3. Saute until the onion is cooked.
4. Add the spinach and salt.
5. When the spinach is cooked, add the cooked dal.
6. Simmer for 5 minutes and turn the stove off. Enjoy with rice or rotis.
Healthy poriyal ready.
