Hummus Wrap with Vegetables

When Anusha announced Dish-it-Out with potatoes and bell peppers, I was wondering what I can do with those vegetables. I did not want to make a stir fry since that seemed too simple and then I remembered the hummus wrap we had during our recent trip to Yellowstone. I had also soaked a big pot of garbanzo beans to cook and freeze that day and decided to combine the hummus and the veggies. Thus, the hummus wrap was born.
It was very simple to make and these are the kind of meals I am looking forward to after a tiring day of running behind the kids and keeping them from fighting. Now, alas if only the vessels washed by themselves
. Well, that is not going to happen and I should go and get the sink clean to start the day fresh tomorrow. Off to the healthy wrap recipe.

Tortilla spread with hummus and filled with vegetables.
Heat oil and add cumin seeds and garlic. Saute for a few seconds.
Add potatoes, carrots, salt, chilly powder and coriander powder and cook for 5 minutes sprinkling water if needed. Add the bell peppers next and cook until the veggies are tender.
Spread hummus over a burrito and layer with vegetables, raw onions, tomatoes and cheese. Wrap into a burrito.
